Round 4....here we go!
Cranberries..that was our secret ingredient this round. I have to say..I was a bit stumped at first. But with a quick search on the Internet, I came across this baby. A huge shout out goes to Tiffany over at Fresh Ideas for the fabulous recipe that just screamed out MAKE ME! So... I did!
It was simply scrumptious!
What you need:4 Large Eggs1 tsp Vanilla2 tsp Lemon Zest1 Cup Butter-Soft2 Cups Sugar1/2 tsp Salt2 Cups Flour2 Cups Fresh Cranberries1/4 Cup Fresh Lemon Juice1/4 Cup Orange Juice
Preheat Over to 325.1. Mix together egg, vanilla and lemon zest.2. In mixing bowl beat butter, ONLY 1 1/4 Cups of sugar and the salt. Then fold in the egg mixture until even. Add flour and beat for 3-5 minutes.-Spray a loaf pan with non-stick cooking spray, and pour in entire mixture. -Bake for 60-70 mins, using the "toothpick test" to see if it is done.3. In a sauce pan over med. heat add fresh lemon juice {squeezed after zest} orange juice, remaining 3/4 cup sugar and cranberries. Simmer for 5 mins. until cranberries have burst. 4. Place a strainer in a bowl and pour the sauce into the strainer. Let the liquid empty in the bowl, press the cranberry mixture to get out all the "yumminess". Pour the sauce over each slice at serving time!
