I love my crock-pot and easy meals that taste like I slaved over the oven all day! Look no further, this meal idea came from At Chef in Training! My entire family agrees that it's a keeper{and once a week-er!}
Salsa Verde Pork Tacos2 lbs pork {roast or picnic cut}kosher salt1 jar salsa verde 1 small can of diced green chilies1 tsp. cumin
Place your pork in the crock- pot. Sprinkle kosher salt on top. Next pour your salsa verde and then your diced green chilies over. Last sprinkle cumin. Cook 6-8 hours on low.
Remove pork from crock-pot and shred...oh it just falls apart- so good! Serve in shells with cilantro, cheese and sour cream.
Spanish Rice1 cup white rice1 Tbs. butter1 cup chicken broth1 cup chunky salsa1/2 tsp. chili powder
Melt butter in a sauce pan, add your rice. Brown the rice and then pour in the chicken broth, salsa and chili powder. Return to boil, cover and simmer 20 minutes or until tender. If the rice still is not fully done, add more chicken broth {cover} and continue to cook. Just keep testing it until you like it!
